Think of pastrami and you'll usually be thinking about beef, but there's no reason why the special curing and spices that go into a pastrami can't be used on other meats and turkey is a versatile food that can be made into tasty pastrami.

Here in the UK, Gilbert's offers a four slice pack that retails at around 2.50 and makes just enough for two decent sized sandwiches.

Price wise, you are looking at a 50% saving from beef and while turkey may not spring to mind as pastrami, it does prove to be quite versatile to use in a sandwich.

The spices and cure, allow the poultry meat to be moist, not swimming in juice, nor too dry but just right when applied to a sandwich.

Add the usual fillings such as coleslaw or even sauerkraut and splash on the ketchup or mustard (or even combine the two) and you've got a great sandwich.
